Coconut & Lime Beetroot with Quinoa, Chickpeas & Lentils

What to do

  1. Finely chop the herbs.
  2. Core and slice the apple and toss in lemon juice to prevent browning.
  3. Stir in the rest of the ingredients, season, and garnish with freshly chopped parsley

What you will need

  • 3/4 small pack mint
  • 1 small pack chives
  • 1 small pack of fresh parsley
  • 1 pack of Coconut & Lime Beetroot salad Toppers
  • red apple
  • 1 tbsp olive oil
  • 1 tbs lemon juice
  • ½ of a 250g pack cooked quinoa
  • ½ of a 400g can chickpeas(120g drained weight) drained and rinsed
  • ½ a 400g can green lentils(120g drained weight) drained
