Smoked Mackerel Couscous Salad

What to do
- Fry the onion in the olive oil in a frying pan until softened, then stir in the lemon juice, cumin seeds and dried chilli flakes (if using), take off the heat and season
- Stir together the onion mix with the dill, apple & couscous.
- Pile onto a serving plate, serve the beetroot and mackerel pieces on top
What you will need
- 50g couscous made up as directed
- 1 small red onion finely chopped
- ½ pack chopped fresh dill finely chopped
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp cumin seeds, toasted
- a pinch (optional) dried chilli flakes
- 1 pack of salad Coconut & Lime Beetroot Salad Toppers
- 2 fillets smoked peppered mackerel, broken into chunks (discard skin and bones)
- 1 red-skinned apple, diced and tossed in lemon juice
