Smokey Shredded Beetroot with Quinoa, Chickpeas & Lentils

SERVINGS: 2 as a light lunch or 4 as a meal accompaniment
What to do
- Finely chop the herbs.
- Core and slice the apple and toss in lemon juice to prevent browning.
- Stir in the rest of the ingredients, season, and garnish with freshly chopped parsley
What you will need
- 3/4 small pack mint
- 1 small pack chives
- 1 small pack of fresh parsley
- 1 pack of Smokey Shredded Beetroot
- 1 red apple
- 1 tbsp olive oil
- 1 tbs lemon juice
- ½ of a 250g pack cooked quinoa
- ½ of a 400g can chickpeas(120g drained weight) drained and rinsed
- ½ a 400g can green lentils(120g drained weight) drained
